The SubCulture Story
SubCulture was born from a love of traditional flavors and a passion for culinary excellence. Founded by Mike and Boel, we have been crafting unique sub experiences for the Denver community since our inception. Nestled in the historic Penn Garage in Capitol Hill, our restaurant has been serving delicious subs made with hand-selected ingredients and fresh daily-baked bread for years.
After relocating to Colorado in 2007, Mike and Boel envisioned a chef-driven restaurant with a menu that would stand out in the Denver food scene. Boel, who hails from Sweden and brings with her a rich background in French cooking, spent a decade honing her skills in London’s vibrant food scene, including at Michelin-starred venues. Mike and Boel met in Miami, Mike, a seasoned restaurateur. Together, they moved to Colorado and discovered the iconic Penn Garage. This location, steeped in history as it once serviced cars for over seven decades, including Molly Brown’s electric car. The converted garage became the home for Sub Culture.
Our Food
At SubCulture, we pride ourselves on our diverse menu, which includes over 60 selections ranging from slow-braised beef to classic Italian deli subs. We are dedicated to using the freshest ingredients prepared daily, City Bakery, a local artisan bakery is delivering warm bread every day — fresh out of the oven. Our commitment to sustainability is also evident, as we operate with 120% offset by electric solar use.
For those seeking plant-based options, we offer a wide variety of vegetarian and vegan subs, featuring the goodness of Watercourse’s fresh seitan in some of our veggie favorites. We strive to support the vegetarian and vegan community in Denver by providing delicious alternatives alongside our traditional meat-based offerings.
